This classic Texas favorite brings together tender dove breast, smoky bacon, fresh jalapeño, and bold seasoning for a bite-sized dish that delivers big flavor. Ingredients

  • 12 dove breasts, cleaned and trimmed

  • 12 slices bacon, cut in half

  • 1–2 fresh jalapeños, sliced into thin rounds

Seasoning & Finish

  • 2 tbsp olive oil

  • 2 tbsp Cleve’s Texas Two-Step Seasoning

  • Fresh thyme or rosemary (optional, for garnish)

Instructions

  1. Prep the Dove
    Preheat oven to 400°F. Pat dove breasts dry and place on a clean work surface.

  2. Season
    Brush each dove breast lightly with olive oil. Season generously on all sides with Cleve’s Texas Two-Step.

  3. Build the Wrap
    Place one slice of jalapeño on top of each dove breast. Wrap tightly with half a slice of bacon, securing with a toothpick if needed.

  4. Bake
    Arrange wrapped doves seam-side down on a wire rack over a baking sheet. Bake for 15–20 minutes, or until bacon is crispy and dove is just cooked through.

  5. Optional Crisp Finish
    For extra crisp bacon, broil on high for 1–2 minutes, watching closely.

  6. Serve
